Warming Mexican Beef Casserole




Ingredients:

  • 1 tablespoon oil, or as needed
  • 1kg beef, trimmed and diced
  • 1 large onion, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 3 cloves garlic, chopped
  • 1 teaspoon grated root ginger
  • 1 tin chopped tomatoes
  • 125ml stock or water
  • 1/2 lemon, juiced
  • 1 pinch salt and pepper

Preparation:

  1. Preheat the oven to 180 C / Gas 4.
  2. In a large pan heat the oil and brown the beef. Then brown the onions.
  3. Transfer to a casserole. Add the spices to the pan and heat, stirring for 1 to 2 minutes.
  4. Add garlic, ginger, tomatoes, stock, lemon juice, and seasoning. Pour the sauce over the meat and onions.
  5. Bake in the oven for 1'½ hours or until the meat is tender.
