Warming Mexican Beef Casserole

Ingredients:
- 1 tablespoon oil, or as needed
- 1kg beef, trimmed and diced
- 1 large onion, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 3 cloves garlic, chopped
- 1 teaspoon grated root ginger
- 1 tin chopped tomatoes
- 125ml stock or water
- 1/2 lemon, juiced
- 1 pinch salt and pepper
Preparation:
- Preheat the oven to 180 C / Gas 4.
- In a large pan heat the oil and brown the beef. Then brown the onions.
- Transfer to a casserole. Add the spices to the pan and heat, stirring for 1 to 2 minutes.
- Add garlic, ginger, tomatoes, stock, lemon juice, and seasoning. Pour the sauce over the meat and onions.
- Bake in the oven for 1'½ hours or until the meat is tender.
