Turkey Bacon Burger




Ingredients:

  • 1 egg
  • 4 tablespoons finely chopped onion
  • 450g minced turkey
  • 55g fine Italian breadcrumbs
  • 2 teaspoons liquid smoke flavoring
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 tablespoons panko breadcrumbs
  • 1 large portabello mushroom cap, cut into thick slices
  • 1 tablespoon olive oil for brushing
  • 115g back bacon, fat removed
  • 115g sliced Gouda cheese
  • 4 burger buns, split and toasted
  • 4 tablespoons spicy brown mustard or to taste
  • 125ml mayonnaise or to taste

Preparation:

  1. Preheat barbecue for medium heat and lightly oil the cooking grate.
  2. Beat the egg and onion together in a mixing bowl. 
  3. Add the turkey, Italian breadcrumbs, liquid smoke, Worcestershire sauce, salt, and pepper. Mix until evenly combined and form into 4 burgers. 
  4. Press each burger into the panko crumbs and set aside.
  5. Cook the turkey burgers on the preheated barbecue until no longer pink in the center and the juices run clear, about 4 minutes per side. 
  6. An instant-read thermometer inserted into the center should read at least 74 degrees C. 
  7. While the burgers are cooking, brush the mushrooms with olive oil and cook on the barbecue along with the bacon. 
  8. Just before the turkey burgers are done, top with the bacon and the Gouda cheese. 
  9. Cook until the cheese melts.
  10. Spread the burger buns with mustard and mayonnaise. 
  11. Place a turkey burger onto each bottom bun and top with the portabello mushroom slices. 
  12. Sandwich with the remaining bun halves and serve.
