Sponge Cake
Ingredients:
- 2/3 cup unsalted butter
- 1 1/2 cup granulated sugar
- 2 1/2 cup flour
- 2 tsp. baking powder
- 1/2 cup milk
- 4 eggs
- 1 tsp. fresh lemon juice
- 1 tbsp. fresh lemon juice
- 1 tbsp. vanilla
- 1/4 tsp. lemon zest
Preparation:
- In a bowl, mix flour and baking powder and set aside.
- Grease a 10-inch cake pan with 2 tbsp. of butter and some flout and set aside.
- in a large bowl, beat the butter and sugar using an electric mixer at medium speed for 4 minutes.
- Add the eggs, vanilla, lemon zest, lemon juice, almond extract, and beat for another 2 minutes.
- add the flour mix followed by the milk and beat for 1 minute or until combined.
- Pour the cake batter into the greased cake pan and bake at a temperature of 350*F for 34-40 minutes on the middle rack.
- You can always insert a toothpick near the center of the cake to check if it is done.
- Remove the oven and let over onto the serving dish.
