Sponge Cake


Ingredients:

  • 2/3 cup unsalted butter
  • 1 1/2 cup granulated sugar
  • 2 1/2 cup flour
  • 2 tsp. baking powder
  • 1/2 cup milk
  • 4 eggs
  • 1 tsp. fresh lemon juice
  • 1 tbsp. fresh lemon juice
  • 1 tbsp. vanilla
  • 1/4 tsp. lemon zest
Preparation:
  1. In a bowl, mix flour and baking powder and set aside.
  2. Grease a 10-inch cake pan with 2 tbsp. of butter and some flout and set aside.
  3. in a large bowl, beat the butter and sugar using an electric mixer at medium speed for 4 minutes.
  4. Add the eggs, vanilla, lemon zest, lemon juice, almond extract, and beat for another 2 minutes. 
  5. add the flour mix followed by the milk and beat for 1 minute or until combined.
  6. Pour the cake batter into the greased cake pan and bake at a temperature of 350*F for 34-40 minutes on the middle rack.
  7. You can always insert a toothpick near the center of the cake to check if it is done.
  8. Remove the oven and let over onto the serving dish.
