Mozzarella Carpaccio




Ingredients:

  • 1 punnet cherry tomatoes, halved
  • 1 clove garlic, finely chopped
  • 60g olives, pitted and chopped
  • 2 tablespoons extra virgin olive oil
  • 1 pinch salt
  • 250g buffalo mozzarella cheese, sliced
  • 1 sprig rosemary
  • 1 red chili, chopped

Preparation:

  1. In a bowl, combine the tomatoes, garlic, olives and oil. 
  2. Add salt to taste and let sit for 30 minutes.
  3. Arrange the mozzarella slices on a large serving platter. 
  4. Sprinkle with the rosemary and red chilli, then spoon over the tomato mixture. 
  5. Serve!
