Mozzarella Carpaccio
Ingredients:
- 1 punnet cherry tomatoes, halved
- 1 clove garlic, finely chopped
- 60g olives, pitted and chopped
- 2 tablespoons extra virgin olive oil
- 1 pinch salt
- 250g buffalo mozzarella cheese, sliced
- 1 sprig rosemary
- 1 red chili, chopped
Preparation:
- In a bowl, combine the tomatoes, garlic, olives and oil.
- Add salt to taste and let sit for 30 minutes.
- Arrange the mozzarella slices on a large serving platter.
- Sprinkle with the rosemary and red chilli, then spoon over the tomato mixture.
- Serve!
